What kind of dish is cơm tấm?

Cơm tấm literally means “rice of broken grains (tấm).” It is cooked from grains that fractured during milling, and it is said to have been a humble, everyday dish originally beloved in the south. Its selling point is a distinctive, slightly crumbly texture, different from plump ordinary rice. The classic version is a one-plate meal topped with charcoal-grilled pork (sườn nướng), served alongside a fried egg, pickled vegetables, and scallion oil.
